Government regulations and standards
Countries adopt fortification standards (voluntary or mandatory) to
regulate fortification. Usually standards specify the minimum levels of the
mineral or vitamin that needs to be in the dry cereal product when it leaves
the mill. Countries may also specify maximum levels, using the Upper Levels set
by the National Academy of Sciences, to ensure that no one consumes chronically
dangerous levels of any nutrient over a long period, while still being high
enough to provide beneficial intake levels. See the section on Guidelines on
